An artisan baker who trained with the best of the best at the Ritz Hotel in London is now serving-up his breads at Stockton Farmers’ Market.
Ed Trewhitt set-up The Brickyard Bakery in Brotton, East Cleveland, earlier this year. But with a career in catering spanning 20 years he is an old hand in the kitchen.
Originally from Redcar, Ed trained at Kirby College in Middlesbrough and his first opportunity in the catering field came in the form of a trainee placement at the Ritz. After that he worked in a string of five star hotels, before setting up his own chain of restaurants in the North East.
Since leaving the restaurant game, it’s been back to basics for Ed. He says: “I feel it’s so important to really be in touch with where our food comes and from and what we’re eating.
“There was a real need for a traditional bakery in the area, where bread was baked with technique and timing rather than using chemical raising agents to produce a good loaf.”
Ed also teaches workshops on bread making to local schools.
The Brickyard Bakery sells a variety of rich dough, wild yeast and sour dough breads as well as other more usual types.:: Stockton Farmers’ Market is held on the last Saturday of every month between 9am-2pm.
